About the coffee

We are proud to work with Edwin Zambrano from the Bella Vista farm in Huila. Edwin puts his Colombia variety coffee through 120 hours of anaerobic fermentation, right after it is dried over lightly shaded raised beds (Marquesinas) for 20 days while the ambient temperature gently hovers between 25 to 35 degrees Celsius. Once dried, the coffee is put into sealed bags and kept in storage for 60 days minimum prior being sent to the mill for processing. The flavour is outstanding, no wonder why Edwin’s great effort produce our most sought after and highest scored coffee.
